spaghetti squash “pasta”
my own recipe
1 spaghetti squash
1/2 bag frozen peas
2 tbsp butter
1 tbsp minced garlic
3/4 cup parmesan cheese
4 tbsp olive oil
salt and pepper
preheat oven to 400 degrees. rub 2 tablespoons of olive oil on the outside of the spaghetti squash and baked in oven for an hour and 15 minutes.
cut spaghetti squash in half and scoop out seeds. then with a fork, scrape the spaghetti squash to loose the strands of squash.
meanwhile melt butter in a skillet on medium heat and add garlic. cook for about 2 minutes then add peas. cook for about 2 minutes until the peas are completely thawed and warm.
add spaghetti squash to skillet and toss lightly. add the rest of the olive oil, salt, pepper, and parmesan cheese and toss together leaving it on low heat until ready to serve.
you could eat this as a side, as an entree or underneath some salmon like my husband and i did, it was delicious! i am really into yummy dishes that are also SO healthy!
