crockpot chicken tortilla soup

2 boneless skinless chicken breasts

2 cups chicken broth

2 cans black beans, drained and rinsed

1 can sweet golden corn, drained

1 can diced fire roasted tomatoes with juice

1 can diced green chilies

1 yellow onion, diced

1/2 jalapeno, finely diced

1 tbsp cumin

2 tsp chili powder

plenty of salt and pepper

optional: sour cream, cheese, avocado, corn tortillas

combine all ingredients in crockpot and cook on high heat for 4 hours.  after 4 hours, take two forks and pull the chicken apart.

for homemade tortilla strips, preheat oven to 400 degrees.  with a pizza cutter, slice the corn tortillas into strips.  place on a  baking sheet and sprinkle with a little salt.  bake for about 12 minutes until the strips are nice and crunchy.  top soup with favorite toppings and homemade strips!
