zucchini noodle shrimp scampi

my own recipe

6 medium size zucchinis, spiralized
1 yellow onion, diced
1/2 cup halved cherry tomatoes
1 lb shrimp, peeled and deveined
3 tbsp olive oil
2 tbsp butter
3 cloves garlic, finely diced
1/2 cup chicken broth
1/2 cup white wine
juice of 1 lemon
zest of 1 lemon
1 tbsp red pepper flakes
1 tbsp dried parsley
1 tbsp dried oregano
1 tbsp garlic powder
salt and pepper






in a bowl, combine shrimp, olive oil, red pepper flakes, garlic powder salt and pepper. toss until shrimp is coated.

bring a skillet to medium heat and melt butter. toss in shrimp. cook for about 4 minutes. remove shrimp but keep the juice in the skillet.

to the skillet, add diced onion and garlic and saute until translucent. add the white wine and scrape all of the brown bits off the bottom of the pan. add chicken stock and stir until mixture thickness. then add shrimp back in, cherry tomatoes, juice and zest of lemon, oregano, salt and pepper.


stir in zucchini until coated and cook for about 7-10 minutes. serve with nice piece of bread to dip in the broth!
