lobster avocado pesto pasta

pesto
2 ripe avocados
2 green onion sprigs
juice of 1/2 lemon
1/4 cup cashews
1/4 cup olive oil
1/4 cup parmesan cheese
1/4 cup cilantro leaves
1 tsp garlic powder
1 tsp salt
1 tsp black pepper

pasta
1 lb spaghetti pasta
1/2 lb langosta lobster
1 tbsp olive oil
1 tbsp minced garlic
1 tsp red pepper flakes

bring water to a boil and cook pasta based on package instructions. i used fresh pasta from our local Italian market and it only needed to cook for 4 minutes!

in a food processor, combine all pesto ingredients until well combined. add more olive oil if the pesto is too thick.

in a skillet, heat olive oil on medium heat. add minced garlic and red pepper flakes to oil and cook for about 2 minutes. add in lobster and saute for 3-4 minutes until cooked through.

drain pasta and add back into pot. pour the 3/4 of the lobster with juice it produced into the pasta and toss together. add pesto and combine with tongs until all of the pasta is covered with the pesto. plate the pasta and add the remaining lobster with juice on top along with some extra cilantro! with the fresh pasta, avocados and lobster, this is a decadent yet very healthy dish!

  5. Ok, so I truly see we have the same taste lol My husband was just showing me a pic last night of the time I made avocado pesto pasta coupled with tuna steak and sauteed veggies:p
