blueberry orange muffins
my own take from sally’s baking addiction
1/2 cup granulated sugar
1/4 cup packed dark brown sugar
1/2 cup plain greek yogurt
2 teaspoons vanilla extract
zest of 1 orange
1 and 3/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp salt
3 tbsp orange juice
2 tbsp milk
1 and 1/2 cups fresh or frozen blueberries
preheat oven to 425F degrees. spray a 12-count muffin pan with nonstick spray or line with cupcake liners.
in a medium bowl using a stand mixer, beat the butter on high speed until smooth and creamy for about 1 minute. add the sugars and beat on high until creamed for about 2 minutes. add the eggs, yogurt, and vanilla extract. beat on medium speed for 1 minute, then turn up to high speed until the mixture is combined and uniform in texture. then, beat in the orange zest until combined.
in a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. pour the dry ingredients into the wet ingredients and slowly mix on low. add the orange juice and milk, combining on the lowest speed. fold in the blueberries with spatula.
scoop batter into prepared muffin pan, filling them all the way to the top. bake for for 20 minutes at 425F degrees, until a toothpick inserted in the center comes out clean.
