cauliflower macaroni and cheese
inspired by pinterest
12oz macaroni (I used fresh from an italian market but of course store bought it fine!)
3 cups water
2 cups skim milk
1 cup cauliflower florets
1 cup shredded smoked gouda cheese
1 cup shredded white cheddar cheese
1/2 cup shredded parmesan
1/2 cup plain greek yogurt
1/4 cup olive oil
salt and pepper
heat a cast iron skillet to medium heat. add the macaroni water and milk to a skillet. boil on medium-high heat, stirring occasionally for 10 minutes until pasta is almost done.
meanwhile, in a food processor, combine the cauliflower, 1/2 cup of each cheese, greek yogurt, olive oil, salt and pepper. pulse the mixture until it is a creamy consistency. add mixture to the skillet once pasta is almost done. continue to cook for another 5-7 minutes until the entire mixture is warm.
put oven on broil, remove the skillet from heat and top with the all of the remaining cheese. carefully place cast iron skillet in the oven and broil for 4 minutes until cheese is browned and bubbly. this is a super healthy take on a not so healthy favorite!
