sauteed calamari on carbonara pasta

my own recipe

4 slices thick cut bacon, diced
2  tsp minced garlic cloves
1/2 lb of raw calamari
3 eggs
1 cup grated parmesan
1 16 oz box spaghetti pasta
salt and black pepper
4 fresh sage leaves, chopped

boil water with salt and add pasta.  cook until al dente.  meanwhile, add bacon to a saute pan and cook until crispy.  remove bacon with a slotted spoon and pour out about half of the grease.  reheat the remainder of the bacon grease to medium heat and add garlic.  saute for about 2 minutes and add calamari.  cook for about 3 minutes and remove from heat.  add chopped sage leaves and continue to stir (the calamari will continue to cook).

in a bowl, combine eggs, 1/2 cup parmesan cheese, salt and pepper.  whisk together until well combined.  set aside.

once pasta is done, strain it and place it into a big bowl.  let cool for 5 minutes (must let pasta cool so when you pour the egg mixture on it, the eggs don’t scramble)!  once pasta has cooled (but is still warm), add the egg mixture and toss until combined.  add in bacon and remainder of cheese and stir together.  place pasta in serving bowls and top with calamari. add extra sage leaves for serving.

this dish was one of my favorites i have ever made and it will definitely become a house hold regular!

  1. what an excellent idea! I love sea food with pasta but I never thought of adding calamari in a carbonara! Sounds delicious! I’ll pin it right away to make sure I won’t forget to try it ;)
