beet battered fried calamari

my own recipe

1/2 pound calamari                                                        Wet Dredge:
vegetable oil                                                                    1 cup any beer
salt & pepper                                                                   1/2 cup all purpose flour

Dry Dredge:                                                                      Dipping Sauce:
1/2 cup mayo                                                                    1/2 cup all purpose flour
1 tbsp sriracha                                                                 1 tsp garlic powder
1 tsp chili paste                                                               1 tsp salt
1 tsp salt                                                                           1 tsp smoked paprika
1 tsp pepper
1 tsp onion powder

for sauce, mix all ingredients in a small bowl and chill until ready to serve.

heat oil in a ceramic dutch oven or cast iron skillet. in two different bowls, whisk wet dredge and dry dredge separately.   wash calamari and pat dry. sprinkle with salt and pepper before dredging. batches at a time, place calamari in wet dredge and then dry dredge and place on a plate. once oil is heated, drop calamari into oil and let fry for about 3 to 4 minutes. remove and place on a plate with a paper towel on it to catch the excess oil. immediately sprinkle with salt.  a favorite restaurant appetizer right at home!
